Chef elevates dining experience with black truffle menu
The Italian restaurant MIO, located in the Four Seasons Hotel Beijing, has welcomed a new chef de cuisine, Matteo Re Depaolini, who has introduced a brand-new menu with the aim of reclaiming the restaurant's Michelin Guide star.
Deeply influenced by traditional Italian culinary principles, Depaolini skillfully blends these concepts with creative and modern cuisine.
Starting his career as a chef at the age of 15, Depaolini brings 20 years of experience to MIO. His dedication to culinary excellence goes beyond just cooking authentic Italian flavors; he meticulously designs every aspect, from ingredient selection and dish design to the presentation of each creation.
"If ingredients represent the living art, then cooking becomes the expressive technique that captivates the senses — a realm from which I derive inspiration," he said.
He recently unveiled a limited-time summer black truffle tasting menu. One standout dish is the classic truffle egg, featuring silky smooth eggs cooked with fragrant black truffle, paired with crisp asparagus for a refreshing touch.
Another must-try is the yellowfin tuna, showcasing fresh yellowfin tuna enhanced by the delicate aroma of black truffle and the tender texture of pearl rice, offering a layered and memorable culinary experience.
