New sake Sei Ryu sparkles in market

A new sparkling sake called Sei Ryu hit the market in Shanghai on August 24.
The drink is created by sake importer and distributor Pinor together with Yuanzu Rice Wine workshop in Shaoxing, Zhejiang province.
The sparkling sake is made with Japanese rice and is fermented in the bottle for a second time to create bubble, mirroring the method of champagne making.
Zhang Yining, founder of Pinor, shared the story of creating the drink. According to Zhang, Sei Ryu is in memory of sake documentary Shejianshangde qingliu (The Clear Stream on Tongue), which tells the origin, history and brewing technique of sake and its connection with Chinese culture.
The first season of the documentary was released last year, and the second season aired in June.
